BioZymes play a crucial role in concentrating phytochemicals at various stages of plant development, particularly in extracting floral scents (FS), which are integral to the ecological functions and industrial applications of plants. Within this process, certain phytochemicals containing aromatic rings, such as 2-phenylethanol, benzyl alcohol, cinnamyl alcohol, 2-naphthaleneethanol, 2-hydroxybenzyl alcohol, 3-hydroxybenzyl alcohol, 4-hydroxybenzyl alcohol, and 3,7-dimethyl-3-hydroxy-1,6-octadiene (linalool), are concentrated. Natural enzymes involved in this process include BEAT (acetyl-CoA alcohol acetyltransferase), BPBT (benzoyl-CoAalcohol benzoyltransferase), and BZL (benzoateligase).
Other phytochemicals that can be purified and concentrated with BioZymes include E-geranylgeraniol (C20-terpene alcohol), farnesylacetone, geranylgeranyl octadecanoate, geranylgeranyl formate, δ-tocotrienol, and various apocarotenoids.
